Rhubarb and Kiwi with Coconut Water Smoothie
Makes 2 servings
Ingredients: 2 to 3 cups of fresh coconut water*; 1/8 cup unsweetened Greek yogurt; 3 tbsp. honey (adjust according to the sweetness of the fruit); 1/2 tsp. vanilla; 4 oz. frozen 1/2-inch pieces of rhubarb; and 10 oz. frozen kiwi, cut into thick chunks.
*More or Less, amount depends on the speed of the blender.
