A season or two ago, Cornbread Chili Pot Pie was made with Oregano Corn as a side dish. Every time I tried to schedule it for publication, another recipe with an immediate seasonal ingredient became a priority. Slowly, it became a forgotten recipe, but it’s a lovely dish. When late autumn arrived, I looked at the recipe, and scheduled it for Superbowl season. Such a hearty recipe is better for extremely cold weather. This economy is real to me. Like most people in 2008, I was laid off. Coincidentally, I received a part-time job. Receiving a part-time job during that time period was extremely lucky, but it also meant several of my bills went unpaid for two years into now. Then last November; I was let go from the part-time job. Unemployment covers the rent and utilities. There’s a little left for food and limited transportation. Each week, I’m down to a few dollars before receiving unemployment benefit. Between the financial instability, I’ve dealt with a few emotional blows. Sweet Potato Pie: The Steps

There are many Sweet Potato Pie recipes using corn syrup. I don’t remember my grandmother and father using that super sweetener. However, I remember plenty of brown sugar. I made this for our Christmas dessert this year, and I understood I had big shoes to fill. Apparently, the boyfriend’s mother makes the best Sweet Potato Pie. I called on my dream team, the Dad and the Granny, to help me with this recipe. Even when I forgot a couple ingredients after I placed the pies in the oven, I called my Granny for reinforcements. Thank goodness she saved the day, and it was great talking with her as the pies were baking in the oven. Of course, I would never ask the boyfriend who does  it better.
