Quite a few years ago, a friend in my undergraduate printmaking class made a simple observation. She mentioned I have fewer problems with difficult printing techniques, but the easy techniques cause me the most trouble. She found the insight about my simple printmaking problems amusing.

Once again, making an omelet is fairly simple for most people, but it causes me problems. My version sticks to the pan and tears easy. The chopped vegetables spill out of the folded egg. With an aversion to runny eggs, a gorgeous, fluffy omelet ends up turning into a rubberize brown. Hope is lost and the omelet gets scrapped into a scramble. It’s tasty, but the elegance is lost. I do trust my skills in making omelets are improving. Until that day in the near future arrives, the frittata will continue to be an easy adaption to my shortcoming of making an omelet. This is a delicious, quick meal that could be made within an hour on a weekday, including prepping time*. In place of chicken use any seafood to make shrimp, fish or crab chowder**. Unlike chicken, add the seafood to the pot after the potatoes are cooked to keep the meat tender. Using fresh corn will enhance the sweetness of the cream and the meat. During the off-season months, use organic frozen corn, for it has a better texture and taste than the non-organic and canned versions. If using fingerling potatoes, slice them. Baby potatoes should be quartered or cut in half, depending on their size. Some people like to peel their potatoes, but this is a weekday meal. Such details can be overlooked in place of saving time. Besides, the visual appearance of red-skinned potatoes provides a nice contrast in a creamy soup. A simple, green salad and a Chardonnay will complete a well-meaning meal.

*Clean and cut chicken on a weekend. Place it in a freezer and defrost before using.
** Buy shrimp raw, clean and devein. Fish should be cut into chucks. Use precooked crabmeat sold in the seafood section.

Getting up early last Saturday was the opportunity to go to the farmer’s market in the city. It was a nice winter warm day of walking pass stalls and creating a menu in my head for next week. Before it became too crowded, I was exiting the market with a heavy bag of Savoy cabbage, spicy turkey sausage, a smoked turkey wing to be placed in the freezer for Southern-style collard greens, gold rush apples, freshly baked pretzels as a low-fat snack, apple cider, and crosnes.
