It’s a summer dish in every southern grandparent’s home. It’s served at weddings, funerals and special events. The sight of it makes pseudo-healthy eaters start a conversation about unhealthy southern food and it’s over-cooked vegetables. Every child of the south has memories of watching television, only to have a large bowl of this vegetable unexpectedly placed in front of them. They dare not verbally protest. The snapping sound of each wax green bean’s ends being trimmed are heard with the sound of a television. For a generation of a certain age, such sounds brings back memories of watching their grandparents prepare meals.  Read more

I remember the first time seeing a moist three-layered cake flavored with juicy pineapples and bananas with rich cream cheese frosting elegantly displayed in a glass cake dish of my childhood home. Since then, a few slices have been enjoyed, but few people know about the ‘Other Great Southern Dessert,’ Hummingbird Cake. Red Velvet cake receives more attention. Red Beans and Chicken over Wild Rice

Red beans and Rice isn’t my favorite dish in the world. My indifference to the stew is why it took some time to develop it. When I originally started making it, I tried adding more spices such as ginger, cinnamon and so forth. The boyfriend and I agree on the older results: Keep trying (however, I later discovered he’s not partial to cinnamon flavors). A few versions later, I’ve learned the characteristics of an excellent bowl of red beans and rice is in its simplicity. Read more
